Our go-to grill meal

As you can see, this card is beat-up as all-get-out.  My aunt served this years ago at one of our girls' weekends and we all came home with a copy of the recipe :)  I promise, promise, promise others will ask you for the recipe too. . .I can't tell you how often I am asked for it.
What you need:
Of course, this is *way* more then 1.5 pounds of chicken. . .I almost always double or triple the recipe so that's why so much is shown here. 

Mix together in a glass or plastic bowl 1 cup mayo (I use the "regular" full-fat kind, but I'm sure the lighter stuff would do too. . .this is what makes the chicken so moist), 1 tablespoon Dijon mustard, 1 tablespoon honey, 1/2 teaspoon garlic salt, 1/2 teaspoon kosher salt, 1/2 teaspoon freshly ground pepper, and at least one crushed garlic clove.  I usually use 2-3.
Cut up the chicken into 1" pieces.  Basically, just so all the pieces are even, the same size. . .this is about 1.5 pounds.
And marinate in the dressing for several hours.  I usually make my dressing in a bowl big enough to accommodate the chicken too but putting everything into a plastic baggie works just as well!
Refrigerate, of course.  If you're going to use wooden skewers, remember to start soaking them at least an hour before grill time.

A couple years ago (when I first took these pictures and never posted them) I then forgot to take the "after" shots.  No problem. . .not only do we make them so often I was able to get cooked shots within a couple of weeks but also, it was the requested dinner on my son's 11th birthday! 
So. . .here is the birthday boy with his "mayonnaise chicken" -- as all my kids call it.  And by-the-by. . .I have a very picky eater who doesn't like mayo but loves this chicken. . .we just didn't tell her for the longest time that it had mayo in it. . . :)
Oh!  Looks like Mammaw and Grandpa were here to celebrate with us that year too :)

  2. If it's got mayo, I'm all over it! Sounds yummy! We don't have a grill, but I'm sure we can find someone who does. =) I'm not much of a griller, but I don't mind if someone else grills stuff for me to eat. =p

    The photos we got were form the past weekend and earlier in the week. It was definitely a full one. And hubby was off for the days I was at the practicum, and he got a ton of pics too, so I wouldn't miss what the girls did for the days. =p
